SPOOKY CHOCOLATE MUFFINS | By Hubert Cormier

What is both tasty and terrifying? This delicious recipe for chocolate-flavoured ghost muffins topped with a marshmallow-like Italian meringue. Truth be told, Italian meringue and marshmallow are made in remarkably similar ways! It's THE touch that’ll make these a hit with your family!
Yield: 12 muffins
Prep time: 45 minutes
Cook time: 20-25 minutes
Ingredients
Muffins
✔ 250 ml (1 cup) all-purpose flour
✔ 250 ml (1 cup) whole wheat flour
✔ 250 ml (1 cup) sugar
✔ 125 ml (½ cup) cocoa powder
✔ 5 ml (1 tsp.) baking soda
✔ 1 egg
✔ 250 ml (1 cup) plain yogurt
✔ 125 ml (½ cup) milk
✔ 125 ml (1/2 cup) unsweetened applesauce
Italian meringue
✔ 1 egg white
✔ 80 ml (1/3 cup) sugar
✔ 30 ml (2 tbsp.) water
✔ 30 ml (2 tbsp.) light corn syrup
Decorative topping
✔ Mini chocolate chips
Instructions
Muffins
1. Preheat oven to 400˚F and grease a 12-count muffin pan.
2. In a large bowl, combine the flour, sugar, cocoa and baking soda.
3. In another bowl, combine the egg, yogurt, milk and applesauce.
4. Pour the wet ingredients into the dry ingredient mixture. Mix until smooth.
5. Bake for 20 to 25 minutes or until a toothpick comes out clean. Let cool.
Italian Meringue
1. In a saucepan, bring the sugar, water, and corn syrup to a boil until thermometer reads 113°C (235°F). Remove from heat.
2. In a bowl, beat egg whites with an electric mixer at medium speed until soft peaks form. Pour the hot syrup over the whites then increase mixer speed. Whip continuously until meringue is warm and stiff peaks form, about 30 minutes.
Assembly
Using a piping bag, decorate each muffin with the Italian meringue. Top with two chocolate chips to create eyes for each ghost!
