Yes! You read that right, I am offering you a recipe for brownies made with cricket powder. This trend towards eating insects is growing and has only just begun…
Did you know that cricket powder is rich in protein, calcium, iron and omega-3? So that’s a great reason to add it to your recipes! You can replace up to 10% of the amount of flour required in a recipe with cricket powder without any alterations in taste (I know, I tried it! After that, it’s a little too much for my taste and the price/quality ratio drops, since it’s still a fairly expensive ingredient versus other protein sources).
Another interesting fact is that cricket powder is one of the most eco-friendly protein sources in the world. Choosing this food is a win-win choice for both health and the environment!
HEALTHY CRICKET BROWNIES
Servings: 12
Preparation time: 10 minutes
Cooking time: 15 minutes
Ingredients
✔ 60 ml (¼ cup) coconut oil
✔ 60 ml (¼ cup) unsweetened applesauce
✔ 5 ml (1 tsp.) vanilla extract
✔ 2 eggs
✔ 150 ml (2/3 cup) wheat flour
✔ 30 ml (2 tbsp.) cricket powder*
✔ 125 ml (½ cup) cocoa
✔ 125 ml (½ cup) brown sugar
✔ 60 ml (¼ cup) dark chocolate chips
*If you don’t like the idea of adding cricket powder to the recipe, replace it with wheat germ!
Preparation
1. Preheat the oven to 350 °F (180 °C) and cover an 8-inch (20 cm) square baking pan with parchment paper.
2. In a large bowl, combine coconut oil, applesauce, vanilla and eggs.
3. Add flour, cricket powder, cocoa and brown sugar, then stir until everything is well mixed.
4. Pour the mixture into the pan, sprinkle with chocolate chips and bake for 15 minutes or until a toothpick inserted in the centre comes out almost clean.
5. Allow to cool to room temperature and cut into squares.
