CARROT PATTIES | By Hubert Cormier

An ultra-satisfying carrot patty that can be eaten for breakfast or before a workout. These are JUST PERFECT. They even can be made ahead of time and kept in the freezer for when needed. Just defrost them at room temperature or warm in the microwave for a few seconds and they’re ready to go!

Ingredients

✔ 750 ml (3 cups) of large flake rolled oats
✔ 60 ml (¼ cup) all-purpose flour
✔ 60 ml (¼ cup) wheat germ
✔ 125 ml (½ cup) brown sugar
✔ 5 ml (1 tsp) of ground cinnamon
✔ 2.5 ml (½ tsp) of ground nutmeg
✔ 5 ml (1 tsp) of baking soda
✔ A pinch of salt
✔ 250 ml (1 cup) Greek yogurt
✔ 2 eggs
✔ 5 ml (1 tsp) vanilla extract
✔ 500 ml (2 cups) carrots grated
✔ 2 ripe bananas, lightly mashed
 
Preparation

1. Preheat the oven to 180 °C (350 °F). Line a baking sheet with a silicone mat or parchment paper.
2. In a bowl, combine all the dry ingredients and mix. Set aside.
3. In a large bowl, combine Greek yogurt, eggs, and vanilla extract. Add the carrots and bananas.
4. Stir the wet ingredients into the dry ingredients. Set the mixture aside for at least 5 minutes.
5. Using a 22.5 ml (1 ½ tablespoon) ice cream scoop, scoop the mixture onto the sheet pans. Makes about 30 patties.
6. Bake one sheet pan at a time for at least 20 minutes or until the patties begin to brown slightly.

In the fall replace the carrot with freshly grated apple!
