I love energy balls. Not only are they easy and quick to prepare, they are my favourite on-the-go snack. I eat them in the car when travelling and after an intensive workout! In this recipe, some of the dates in the traditional recipe are replaced with dried apricots to add some variety—and taste—to our diet! One ball is enough after a light workout, but if you’re worn out, go for two instead!

Preparation time: 15 minutes

Cooling time: 30 minutes


Ingredients

✔  250 ml (1 cup) almonds

✔  125 ml (½ cup) cashews

✔  180 ml (¾ cup) dried apricots

✔  125 ml (½ cup) pitted dates

✔  30 ml (2 tbsp) hemp seeds

✔  60 ml (¼ cup) rolled oats

✔  15 ml (1 tbsp) honey

✔  125 ml (½ cup) shredded coconut, unsweetened
 
Preparation

1.   In a food processor, combine almonds and cashews. Process until well chopped.

2.   Add apricots, dates, hemp seeds, oats and honey. Mix until you obtain a slightly mealy dough. Add a little water to the mixture if necessary.

3.   Form balls the size of a golf ball.

4.   Roll the balls in the shredded coconut. Refrigerate.
