CARAMEL TOFUDDING | By Hubert Cormier

Dessert often rhymes with sweet, chocolaty or fruity, but rarely does it contain tons of protein! This salty caramel tofu pudding is an alternative that breaks that pattern. Silken tofu makes for a smooth dessert and provides more than 10 grams of protein per serving. You can also enjoy this dessert as a post-workout treat!

Refrigeration time: 2 hours
Ingredients
✔ 250 ml (1 cup) 2% M.F. milk
✔ 45 ml (3 tbsp.) brown sugar
✔ 1 ml (¼ tsp.) salt
✔ 30 ml (2 tbsp.) cornstarch
✔ 5 ml (1 tsp.) vanilla extract
✔ 250 ml (1 cup) silken tofu
Preparation
1. In a saucepan, heat half of the milk (½ cup) with the brown sugar and salt over high heat. Stir and bring to a boil. Reduce heat to low and simmer for about 10 minutes until the mixture thickens and darkens. Remove from heat.
2. Whisk in the cornstarch, remaining milk and vanilla extract. Let cool for 10 minutes.
3. In a mixing bowl, combine the caramel and silken tofu. Using a blender, mix until homogeneous and smooth.
4. Pour mixture into two ramekins and refrigerate for at least two hours before serving.
