Walnut bread pudding
Treat yourself to this comforting walnut bread pudding with rich vanilla caramel sauce. It’s the perfect mix of soft bread, crunchy walnuts, and velvety caramel. Enjoy any time, either after a meal or as a well-deserved sweet snack!

Ingredients
- 6 cups (1.5 L) cubed fresh raisin bread or fresh dried fruit bread
- 1 ¾ cups (425 ml) milk
- 4 eggs
- ¼ cup (60 ml) sugar
- 1 tsp (5 ml) ground cinnamon
- 1 tsp (5 ml) vanilla
- ½ cup (125 ml) walnuts, coarsely chopped
- ½ cup (125 ml) water
- ½ cinnamon stick
- ¼ cup (60 ml) 35% single cream
- ¼ tsp (1 ml) vanilla
- ¼ cup (60 ml) chopped nuts
- Pinch of salt
Bread pudding preparation:
- Preheat oven to 180 °C (350 °F).
- Spread the bread on a baking sheet. Bake for 12 to 15 minutes. Let cool.
- Whisk milk, eggs, sugar, cinnamon and vanilla in a bowl until smooth.
- Place bread and walnuts in greased 9-inch (2.5 L) square baking dish. Pour in egg mixture and toss to coat. Let stand for 15 min, stirring halfway through to soak bread completely.
- Bake for 30 minutes or until bread mix is golden and set.
Vanilla caramel sauce preparation:
- Combine sugar, water and cinnamon stick in a medium saucepan. Simmer over medium heat for about 20 minutes until lightly caramelized. Remove from heat.
- Remove the cinnamon stick. Add the cream and vanilla while whisking. Add chopped walnuts and salt.
- Drizzle hot caramel sauce over warm bread pudding before serving.
