ITALIAN EGG BITES | By Hubert Cormier

Lately, egg bites are all the rage in coffee shops and fast food chains. Although they’re a great option as a quick fix for your hunger, cooking them yourself at home is a much healthier, more economical and tastier choice! I chose to cook my own using a spaghetti spice mix to get the delicious Italian flavours!
 
Servings: 8 bites
Preparation time: 10 minutes
Cooking time: 30 minutes

Ingredients
  4 eggs
  30 ml (2 tsp.) all-purpose flour
  30 ml (2 tbsp.) milk
  125 ml (½ cup) light cream cheese
  Salt and pepper, to taste
  250 ml (1 cup) broccoli florets, blanched
  125 ml (½ cup) cheddar cheese
  15 ml (1 tbsp.) Italian seasoning or spaghetti seasoning mix
 
HUBERT'S TIP
''Bites can be kept frozen for up to 3 months but will release some water as they thaw. Simply blot excess water with paper towels if necessary.''

 
Preparation
1.  Preheat the oven to 350 °F and lightly grease 8 cavities of a muffin pan.
2.  In a large bowl, beat the eggs. Stir in remaining ingredients.
3.  Bake for 30 minutes and let cool before eating. Store in the refrigerator.
