Feel like eating cheesecake for breakfast? Well, you can have your cake and eat it too with this Greek yogurt oatmeal treat that’s just like your favourite dessert! Even better, it's nutritious and tasty. With a variety of ingredients, a serving of oatmeal squares will get your day off to a good start. These breakfast oatmeal squares can be prepared quickly and keep in the fridge for several days.

Baking time: 30 mins.

 
Ingredients

 375 ml (1 ½ cups) large flake rolled oats
 250 ml (1 cup) whole wheat flour
 125 ml (½ cup) pecans, coarsely chopped
 125 ml (½ cup) brown sugar
 5 ml (1 teaspoon) ground cinnamon
 1 egg, at room temperature
 125 ml (½ cup) melted butter
 60 ml (¼ cup) milk, at room temperature
 500 ml (2 cups) vanilla flavoured Greek yogurt
 2 eggs
 10 ml (2 teaspoons) of vanilla extract
 45 ml (3 tablespoons) of whole wheat flour
 375 ml (1 ½ cups) of frozen blueberries

Preparation
1. Preheat the oven to 175°C (350°F). Line a square baking pan with parchment paper, making sure to let it extend over the edges.
2. In a mixing bowl, combine the oats, flour, pecans, brown sugar and cinnamon. Set aside.
3. In another bowl, whisk together the egg, melted butter and milk. Stir the wet ingredients into the dry ingredients.
4. Place the mixture in the baking pan. Using a measuring cup or glass, press the mixture firmly onto the bottom of the pan. Set aside.
5. In the same bowl as the one used for the wet ingredients, combine the yogurt, eggs, vanilla extract, and flour, then gently fold in the blueberries.
6. Pour the Greek yogurt mixture over the oat crust.
7. Bake in the oven for 30 minutes or until the Greek yogurt topping is set. Let cool completely before removing from pan and cutting into 9 portions.
