COMFORTING ITALIAN WEDDING SOUP | By Hubert Cormier

Italian Wedding Soup is perfect for chilly weeknights. A truly COMFORTING soup bursting with flavour. A delight for the eyes, the taste buds, and the heart!
Servings: 6 to 8
Preparation time: 30 min.
Cooking time: 25 min.
Ingredients
Turkey Meatballs
✔ 454 g (1 lb) ground turkey
✔ 1 onion, finely chopped
✔ 2 garlic cloves, finely minced
✔ 125 ml (½ cup) breadcrumbs
✔ 1 egg, lightly beaten
✔ 60 ml (¼ cup) fresh parsley, finely chopped
✔ 60 ml (¼ cup) grated Parmesan cheese
✔ Salt and pepper to taste
Soup
✔ 2 onions, finely chopped
✔ 4 carrots, sliced
✔ 4 stalks celery, thinly sliced
✔ 15 ml (1 tbsp.) olive oil
✔ 2 garlic cloves, finely minced
✔ 30 ml (2 tbsp.) dried oregano
✔ 1 bay leaf
✔ 2 sprigs of fresh thyme
✔ 15 ml (1 tablespoons) of chili flakes
✔ 3 L (12 cups) homemade or store-bought chicken broth (no salt added)
✔ 250 ml (1 cup) mini farfalle pasta (or any other small pasta - acini di pepe, orzo, stars, shells, etc.)
✔ 1 L (4 cups) kale, thinly sliced
✔ Salt and pepper to taste
✔ Grated Parmesan cheese
Preparation
1. Prepare the turkey meatballs. Make small meatballs. Set aside in the fridge.
2. Heat oil in a large saucepan over medium heat. Lightly soften the vegetables. Add garlic. Cook for one minute. Add the herbs and spices. Top with the broth of your choice. Bring to a boil.
3. Simmer for 15 minutes. Add the pasta and meatballs. Continue cooking for at least 10 minutes or until the pasta is al dente.
4. At the end of cooking, add the kale. Adjust seasoning. If necessary, add more broth.
5. Serve immediately with grated Parmesan cheese and fresh pepper.
HUBERT'S TIP ☝️
This soup is perfect for giving a second life those wilted vegetables at the back of the fridge. Peppers, fresh beans, mushrooms, eggplant, cabbage, etc. Just add them at the proper time during the soup cooking process to get the best out of them.
