BLUEBERRY SILVER DOLLAR PANCAKES | By Hubert Cormier
It's blueberry season! Why not go to a field and pick a couple of baskets? After all, Quebec blueberries are renowned for being delicious and now’s the time to stock up for the rest of the year! Looking for ideas to put the spotlight on these blue pearls? Here’s the perfect recipe! Silver dollar pancakes add a twist to your breakfast, or they can easily be the star of your next sweet dessert!
Servings: 4 to 6
Preparation time: 5 min
Cooking time: 15 min
✔ 250 ml (1 cup) plain Greek yogurt
✔ 250 ml (1 cup) all-purpose flour
✔ 180 ml (¾ cup) milk
✔ 30 ml (2 tbsp.) sugar
✔ 2.5 ml (½ tsp.) baking soda
✔ 1 ml (½ tsp.) salt
✔ 1 egg
✔ 2.5 ml (½ tsp.) vanilla extract
✔ 250 ml (1 cup) fresh (or frozen) blueberries
1. In a large bowl, combine the Greek yogurt, flour, milk, sugar, baking soda and salt.
2. In a second bowl, beat the egg with the vanilla extract.
3. Add the egg mixture into the yogurt mixture and stir gently. Once it is thoroughly incorporated, gently fold in the blueberries.
4. In a pre-oiled crepe pan or non-stick skillet, pour about 1 tbsp. (15 ml) of batter per pancake. Cook for about 1 minute or until bubbly, then flip and cook for 30 seconds or until both sides are cooked.

Serve these beautiful pancakes with plain Greek yogurt, blueberries, and maple syrup. Purely delightful—and a complete breakfast! You could even make little skewers with cheese, fruit, and silver dollar pancakes to add a little spark of fun and creativity!
