SPICED MEATBALLS WITH TOMATO SAUCE AND HERBS

🍝SPICY MEATBALLS🍝

Kick off the new year right with the perfect recipe for January! Served with an herb-tomato sauce, these spicy meatballs are easy to prepare and very tasty. Perfect for a hearty dinner shared with family or friends, this meal will become a winter favourite. 😋

Servings: 4  portions
Preparation time: 20 minutes
Cooking time: 30 minutes
Total time: 50 minutes

Ingredients 
 500g minced pork and beef
 1 large garlic clove (or 2 small ones), minced (for meatballs)
 ½ tbsp. ground coriander
 ½ tbsp. ground cumin
 1 tsp. ground cardamom
 ½ tbsp. smoked paprika
 1 ½ tsp. salt
 ¼ medium onion, grated
 1 egg, beaten
 25 g fresh breadcrumbs
 4 garlic cloves, minced (for sauce)
 1 small can crushed tomatoes
 1 lemon, quartered
 1 large handful fresh mint
 1 large handful fresh flat-leaf parsley
 6 to 7 tbsp. full-fat sour cream
 
Meatballs preparation:

1. In a large bowl, mix ground pork and beef, garlic, coriander, cumin, cardamom, smoked paprika, salt, onion, egg and breadcrumbs until well incorporated.

2. Shape into small balls about 2.5 cm in diameter and set aside.

3. In a large skillet over medium heat, add a drizzle of oil and cook the meatballs in batches until cooked through and evenly browned.

4. Transfer the meatballs to a plate and set aside.

Preparation of the sauce:

1. In the same skillet, sauté the garlic for 1 to 2 minutes.

2. Add the crushed tomatoes and stir, leaving the sauce to simmer for 10 to 15 minutes, until slightly thickened.

3. Return the meatballs to the skillet and cover with the sauce. Simmer for 5 minutes to allow flavours to blend.  

Finishing touch:

1. Garnish meatballs with mint, parsley, sour cream and a drizzle of lemon juice.

2. Serve with the mint and parsley salad for a touch of freshness.
