Valentine’s Day is an occasion to celebrate love and … to eat a decadent dessert, right? So, I took the liberty of preparing a recipe for the occasion! These cake pops hold a little surprise: a veggie in disguise. As a matter of fact, beetroot is perfect for this dessert because its taste goes unnoticed and because it enhances the cake’s red colour.

Servings: approx. 30 cake pops
Preparation time: 30 minutes
Cooking time: 30 minutes
Resting time: 1 hour
Chilling time: 1 hour

Ingredients

CAKE
  60 ml (¼ cup) unsweetened cocoa
  500 ml (2 cups) all-purpose flour
  5 ml (1 tsp.) baking powder
  2.5 ml (½ tsp.) salt
  3 eggs
  60 ml (¼ cup) vegetable oil
  250 ml (1 cup) beet puree (½ of a 398 ml can with its juice) mashed
  185 ml (¾ cup) sugar
  5 ml (1 tsp.) vanilla extract
  A few drops of red gel colouring (optional)

FROSTING
  250 ml (1 cup) Greek-style vanilla yogurt
  1 ½ package (340 g) light cream cheese, room temperature
  1 L (4 cups) icing sugar
 
Preparation
1.  Preheat oven to 350 °F. Grease an 8-inch baking pan.
2.  In a bowl, combine cocoa, flour, baking powder and salt. Set aside.
3.  In a large bowl, beat the eggs and oil. Add the beet puree, sugar, vanilla and red food colouring.
4.  Gradually stir in dry ingredients.
5.  Pour batter into a springform pan and bake for 25 to 30 minutes or until a toothpick inserted in the cake comes out clean.
6.  Let cool for about 1 hour before removing from pan. Crumble cake with your fingers. Set aside.
7.  Using a hand mixer, whip the cream cheese. Gradually add the Greek-style vanilla yogurt and icing sugar.
8.  Mix 250 ml of frosting (or more if necessary) with the crumbled cake. The mixture should no longer be crumbly. You should be able to roll the mixture into firm balls (30 ml of the mixture per ball).
9.  Lastly, insert the wooden lollipop sticks into the balls and dip the balls into the frosting. Decorate as you wish. Let cake pops set in the refrigerator for about 1 hour before serving.
