STRAWBERRY MOUSSE | By Hubert Cormier

As a kid, I used to love pudding and mousse and even good old-fashioned Jell-O in a pouch. Fortunately, my taste has become much more refined with age! That said, every so often, I still like to whip up these classics and enjoy them as much as I did back then. Will this strawberry mousse make you as nostalgic as it makes me? As a bonus, it’s made with Greek yogurt and real fruit, which means it a great post-workout snack!

Preparation time: 15 minutes
Cooking time: 3 minutes
Chill time: 1h30 to 2h30
Ingredients
✔ 500 ml (2 cups) strawberries, diced
✔ 60 ml (¼ cup) honey
✔ 30 ml (2 tbsp.) lemon juice
✔ 175 ml (½ cup) Greek-style vanilla yogurt
✔ 4 egg whites

Steps
1. In a saucepan, cook strawberries and honey for 2 to 3 minutes over medium heat. Remove from heat and stir in lemon juice mixture. Let cool.
2. In a blender, combine the strawberry mixture with the yogurt and blend for 1 to 2 minutes, then chill for 30 minutes.
3. Using an electric mixer, beat egg whites on high speed until stiff peaks form. Gently stir in half the egg mixture into the strawberry mixture. Add the rest, and make sure not to break up the air bubbles to keep the foam light and fluffy.
4. Divide the mousse into 4 glasses and chill for 4 to 6 hours. Before serving, garnish with fresh strawberries (optional).
